Squash and Beans Coconut Curry
One fine day I noticed that I had an acorn squash that was ripening and not much else to eat. So, I threw together everything I had in the pantry. I took some inspiration from my mother’s ‘pumpkin olan’ and the Filipino dish ‘ginataang sitaw’.

Ingredients

0.5onion
finely chopped
1 tspginger garlic paste
1acorn squash
diced
1 canwhite beans
½ cupgreen beans
can of coconut milk
1 tspcurry powder
1green chili slit
optional
¼ tspblack bean garlic paste
salt
Instructions
Step 1
Sauté onion until translucent
Step 2
Add ginger-garlic paste and cook until the raw smell goes away
Step 3
Add squash and green beans and sauté for a minute
Step 4
Add coconut milk, green chili, curry powder and salt and mix everything
Step 5
Cover and cook on low heat until squash is soft (about 10-15 minutes)
Step 6
About 5 minutes before squash is cooked, add white beans and cook for 5 minutes
Step 7
Take it off the stove and add black bean garlic paste. Let it sit for 5 minutes
Step 8
Serve with rice or naan
