Chorizo and Cannellini Bean Chicken Traybake

The salsa verde in this recipe adds freshness and colour as well as flavour. It’s the ideal midweek meal as it’s light and quick to prepare.

Instructions

Step 1
Preheat oven to 200°C (180°C fan) mark 6. In a large bowl mix the olive oil and harissa with some seasoning. Add chicken thighs and rub harissa mixture all over.

Put the cannellini beans, tomatoes and chorizo in a large roasting tin or ovenproof dish, season and stir to mix. Arrange chicken thighs on top, skin side up.

Cook in oven for 30-35min until chicken is cooked through. Meanwhile, whizz salsa verde ingredients with some seasoning in a food processor until finely chopped.
Step 4
Drizzle salsa verde over chicken and serve with a green salad, if you like.
