2 cupssalsa
or 1 can Rotelli
1 x 15 ouncescan black beans
rinsed and drained
2 tablespoonsreduced-sodium taco seasoning
¼ teaspoonground cumin
6flour tortillas 8 inches
¾ cupreduced-fat sour cream
1 cupshredded reduced-fat mexican cheese blend
1 cupshredded lettuce
¼ cupfresh cilantro
minced

Instructions
Step 1
In a large skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink, breaking it into crumbles; drain.
Step 2
Stir in the salsa, beans, taco seasoning and cumin.
Step 3
Place 3 tortillas in an 11x7-in. baking dish coated with cooking spray. Layer with half of the meat mixture, sour cream and cheese. Repeat layers., Cover and bake at 400° for 25 minutes.
Step 4
Uncover; bake until heated through, 5-10 minutes longer. Let stand for 5 minutes; top with lettuce, tomato and cilantro.
