Curry Chicken Burgers

Curry Chicken Burgers

Really simple to make and took no time at all 👍 Pop all the ingredients in a blender, make into small burger shapes (I used a muffin tin to help them hold their shape) and cook for 25 mins @ 180 degrees in the oven.

🔹chicken breasts x 1
🔹thumb sized piece of ginger
🔹a handful of coriander
🔹a splash of lime juice
🔹1 tbsp of garam masala
🔹1 onion

I paired with aubergine burger buns and a spicy (I had to remove the chillis from mine!) tomato, avocado and lime salad, beetroot and carrot pickled salad and some sweet potato wedges 🤤

It was delicious!

I used chicken breasts here as it’s a lean meat (high in protein, low in fat). Replace with chickpeas, rice and tahini if you’d like a veggie alternative 🤷♀️ This isn’t as high in protein, but it does have a good mix with both rice + chickpeas creating a complete protein mix 🙌🏻

Instructions
Step 1
Pop all the ingredients in a blender, make into small burger shapes
Step 2
Prep either a tray with greaseproof paper or muffin cases with fry light
Step 3
Shape the mixture into round balls and place either on your tray of into your muffin cases
Step 4
Cook for 25 mins @ 180 degrees in the oven.
