Tasty Low-fat Minced Turkey Oven-baked Burgers

My go-to mini tasty schnitzels, especially when I am watching my weight. This is a healthier yet still very tasty version! Great if you need a change from "boring" chicken and perfect for food meal prep. It stays fresh for 4-5 days in the fridge and I really enjoy it cold as well! Traditionally, these are usually made from pork and/or beef mince, fried in a lot of fat in the Balkan area and taste really good, so this is a healthier take on them. I usually use turkey breast, but if that's too lean for you you can go with turkey thighs, or, if you're not restraining from fat - you can go with the pork-beef mince (suggestion: around 40 pork: 60 beef ratio) Serve with mashed potatoes, rice, quinoa... And some fresh salad!

Instructions

Preheat the oven to 210 C.

Take a big bowl and put the mince in. Take the water-soaked bread, squeeze the water out with your hand and add to the mixture.

Add all the other ingredients and mix well with your hands.

Make small schnitzels and put them on a baking tray layered with parchment paper.
Optionally, if you wish you can give them a light oil brush.

Bake for around 30-35 minutes Look out for nice light brown colour. Watch out not to dry them out, since we're baking very lean meat.
Step 6
Serve with rice, quinoa, cuscus, mashed potato... Works well with all.
