Ingredients
2 servings
2sub rolls
8”, sliced lengthwise
2 ciceberg lettuce
shredded
⅓ cmayo
1garlic clove
crushed or minced fine
1 Tbsred wine vinegar
oregano
to taste
salt
pepper
3pepperocinis
whole, sliced
1tomato
sliced
0.5white onion
small, sliced thin

8 sliceshot capicola

½ cshredded mozzarella cheese
divided
½ cshredded provolone cheese
divided
½ cshredded parmesan cheese

Instructions
Step 1
Set the oven to broil on high.
Step 2
In a medium bowl, add mayo, garlic, sliced pepperocinis, oregano, salt, pepper, and red wine vinegar. Whisk until well incorporated. Add lettuce on top. Wait to mix until ready to top the sandwiches.
Step 3
Spread the cherry pepper spread on the inside of each sub bun.
Step 4
On each of the sub rolls on one side add the salami, gabagool, and pepperoni.
Step 5
On the other side of the rolls add the cheeses.
Step 6
Place subs on a broiler safe sheet pan and broil for 3-5min until cheese is melted and starting to brown. Keep an eye on it!
Step 7
While the subs are toasting, toss the grinder salad with the dressing.
Step 8
Remove the subs from the oven and top with sliced tomatoes, onion, and the tossed grinder salad.
Step 9
Serve with a pickle and your favorite chips!
