Falafel Waffle Sandwich

The falafel waffle (aka falaffle) is up next on my waffle journey. Tbh this was pretty hard to bite into so I’d recommend eating it as an open-faced sandwich 🧇 BUT I do like how quick and easy and tasty making falafel in the waffle iron is!

Instructions
Step 1
Marinate your chicken in garlic, lemon, honey, salt, and pepper. I like to poke a few holes in the chicken with a fork so the juices can get in there. Set the chicken aside for later.
Step 2
Mix the falafel powder with the appropriate amount of water (I cannot remember right now, its on the box haha). Cover and let the mixture sit for 30 minutes to an hour.
Step 3
While you are waiting for the falafel mixture to set, let's make some tzatziki. Mix the yogurt, lemon, garlic, dill, parsley, and shredded cucumber.
Step 4
Grill that chicken!

Lightly brush the top and bottom of the waffle iron with oil. Fill the waffle iron about three-quarters of the way full (some waffle iron should still be showing). Close the lid gently and cook until the falafel is golden brown and firm in the center, 6 to 10 minutes.
Step 6
Cut the waffle into 4ths. Top with tzatziki, arugula, and tomatoes and enjoy
