Ingredients
7 servings
1 x 15.5 ozcannellini beans
can, rinsed and dried
¼ tspcumin
1 tspgarlic powder
2garlic clove
chopped
½ tspsmoked paprika
1 cupbread crumbs
2 Tbspmilled flax seed
mixed in separate bowl with 6 tbsp of water and chilled for 5 minutes then added to mixture
2 Tbspketchup
or barbecue sauce, I use
1 x 15 ozblack beans
can
0.5Vidalia onion
chopped
Instructions
Step 1
Place all ingredients (after chilling flax seed egg substitute) into blender and pulse. You want it to be mixed well but also still have some texture and chunks of bean.
Step 2
Scoop (heaping) 1/3 cup out and roll into ball and press into a patty. This should make about 7 patties. You can store these in the refrigerator for about 5 days and freeze them for even longer.
Step 3
If doing mini meatloafs use the same measurements for the muffin tin, 1/3 cup each. Cook at 425° for 20 minutes
