Instructions
Step 1
Cook blackberries and sugar with a few tablespoons water and push through a sieve
Step 2
Allow to cool
Step 3
Crush meringues and whip double cream until thick
Step 4
Stir together cream, meringues and fruit juice until lightly marbled
Step 5
Put in pudding basin
Step 6
Cover and freeze at least overnight
Step 7
Take out of freezer approx. 30 mins before use and turn out of basin onto a plate (may need to dip basin into hot water)
Step 8
Cut into slices
