Instructions

Step 1
Grate the butter using a cheese grater onto a plate. Place the plate in the freezer.
Step 2
Bring berries, sugar and lemon juice to a boil in a medium sized sauce pan over medium heat.
Step 3
In a small bowl, mix together cornstarch and water until the cornstarch is fully dissolved.
Step 4
Add cornstarch mix to the pan and mix well. Continue to cook for 2 minutes. The berries will begin to thicken and will continue to do so when cooled. Set aside.
Step 5
Mix together the flour, oats, cereal, and cinnamon in a stand mixer with the paddle attachment. Mix only until incorporated.
Step 6
Add in the chilled butter and mix until the butter begins to break apart (about 15 seconds).
Step 7
Add yolks, yogurt, brown sugar and vanilla. Mix until a dough begins to form. Add in water a tablespoon at a time so the dough sticks together and pulls off the side. More or less may be needed so adjust as necessary.
Step 8
Roll out the dough to 1/8th inch thickness on a floured surface. Cut into 4x4.5 in rectangles. Reform and reroll the dough until all is used.
Step 9
Add a tablespoon or two to the center of the cut outs and spread. Leaving the edges clear (about 1/4th inch worth).
Step 10
Fold the longer ends together, overlapping them slightly.
Step 11
Pinch together the edges so the filling stays. If some squeezes out, no big deal. Press down the overlapped pieces together lightly.
Step 12
Flip the bar over so the seam is face down. Repeat until all are completed and place all of them on a lined cookie sheet.
Step 13
Preheat oven to 350 degrees.
Step 14
You can chill the bars at this time in the freezer for 10 minutes. I recommend it but I didn't do it so you can skip it if you want to. But again, I do recommend it.
Step 15
Cook for 20 minutes or until edges begin to brown.
