Fish Taco Sauce
½ cupsour cream
⅓ cupmayonnaise
2 tablespoonslime juice
fresh squeezed

Instructions
Step 1
Pat dry room temperature rockfish filets. Lightly drizzle each filet with oil on both sides. Combine the following spices: salt, black pepper, garlic powder, onion powder, smoked paprika, oregano, and cayenne pepper; Then, sprinkle spice mix over each filet on both sides. Gently pat the spices into the filets.
Step 2
In a skillet on medium-high heat, add in 2 tablespoons of oil. Once oil is hot, add in rockfish filets. Cook for about 2-3 minutes on each side or until the fish is fully cooked and gets a blackened crust on each side.
Step 3
For sauce, in a bowl, combine and whisk sour cream, mayonnaise, lime juice, cilantro, salt, black pepper, garlic powder, cumin, and smoked paprika.
