Apple Floss
I did about 4 X this recipe. I used 5.5 lb of apples. I put 8 Oz of sugar in them. I used 3 pints milk and added 350g sugar. I used 16 eggs. I added sugar to the whites until it tasted sweet enough. I cooked it for about 45 minutes to an hour in my big rectangular white dish.

Instructions
Step 1
Prepare and cut up apples into small pieces, stew gently, adding half of the sugar.
Step 2
Mash to a pulp.
Step 3
Beat yolks of eggs and add to heated milk and half the remainder of sugar, and stir until thick.
Step 4
Whisk whites with a little sugar.
Step 5
Pour apple into a dish and cover with custard, finally pouring over whites of eggs.
Step 6
Dust with sugar and bake until egg white is hard (350°).
Step 7
This sweet is equally nice hot or cold.
