Ingredients

500gminced beef
140gpancetta
diced
400gchopped tomatoes
200mlred wine
15gbasil
chopped
150gwhite onion
diced
100gcarrot
grated
2 Tbspolive oil
100mlwater
100gCheddar Cheese
Grated
45gParmesan Cheese
Grated
125gMozzarella Ball
Drained and grated
1 tspnenglish mustard
6 sheetslasagne
50gbutter
30gplain flour
300mlmilk
salt

Instructions
Step 1
Pre heat the oven 220c gas mark 7 200c fan oven
Step 2
Heat the olive oil in a deep sided frying pan. Add the pancetta and cook until it starts to brown, then add the minced beef and start to break up and cook until the mince is brown
Step 3
Add the onion and carrot and cook in the pan until soft
Step 4
Add the wine, water and Puréety Bolognese seasoning with the chopped tomatoes mix well and then simmer for 20-30 mins. Add chopped basil last
Step 5
In the meantime to make the cheese sauce; first melt the butter in a saucepan. Then add the flour and stir in to a paste. Cook out for a minute then add a 3rd of the milk, whisk the whole time to prevent lumps forming. Add the rest of the milk a 3rd at a time whisking continuously
Step 6
Season the sauce with salt & English mustard. Cook out for a minute or two before adding the grated cheddar cheese. Stir in the cheddar cheese until it has melted into the sauce. Then remove from the heat and add the mozzarella and stir in
Step 7
Now it's time to build the lasagne; spoon half the meat sauce into a dish and top with lasagne sheets (break the sheets if necessary to avoid overlapping)
Step 8
On the next layer, use the remaining half of the meat sauce then top with lasagne sheets again filling in any gaps with broken bits of Lasagne
Step 9
Top with the cheese sauce and finish with grated parmesan
Step 10
Cook the lasagne for 35-45 minutes or until golden brown and the pasta is cooked
Step 11
Leave lasagne to rest for at least 15 minutes before serving... enjoy!
