Spicy Beef Eggplant Pasta

Instructions

Step 1
Heat oven to 400F. Soak cubed eggplant in a bowl of water for about 15 minutes. Then start to cook for about 15-20 minutes.
Step 2
Meanwhile, cook pasta 1 minute shorter than instructed time. Set aside.
Step 3
Meanwhile, Cook bacon in a pan over medium heat until the bacon is crisp, about 5 minutes.
Step 4
Add garlic ground beef, cook until lightly browned, about 6 minutes.
Step 5
Add tomato paste, salt, pepper, umami powder, red chili pepper flake, and mix.
Step 6
Add cooked eggplant, tomato sauce, beef broth, thyme, oregano, and chili oil. Let it simmer for about 5 minutes.
Step 7
Add parmesan cheese, cooked pasta, and mix well.
Step 8
Serve with chopped parsley.
