Ingredients

1.5 poundstilapia
US farm raised if possible
2 tablespoonslime garlic & cilantro spice blend
2 tablespoonsextra virgin olive oil
1jalapeno peppers
chopped with seeds removed
8 packetslime drink powder
½ cupwater
Salt
cayenne pepper
to taste
1 teaspoonhoney
optional
1tomatoes
chopped, firm, ripe, optional
Fresh dill
as garnish, optional
Instructions
Step 1
In a deep medium glass or ceramic bowl combine all the ingredients except the fish and optional tomatoes.
Step 2
Arrange each piece of fish in the marinade, coating each piece well.
Step 3
Cover with plastic wrap and refrigerate for one hour, turning fish occasionally.
Step 4
After an hour, drain off marinade, saving it to baste the fish.
Step 5
Preheat oven to 350 degrees.
Step 6
Arrange fish fillets in baking dish, and baste fish generously with marinade. Top with tomatoes if using.
Step 7
Cover baking dish loosely with tin foil and bake fish for 20 to 25 minutes until fish flakes easily with a fork and is opaque. Baste fish occasionally while baking.
Step 8
Garnish with fresh dill, if desired.
