Potato, Cheese and Onion Pie

Instructions

Step 1
Preheat the oven to 180ºC
Step 2
Make the pastry by rubbing the fat into the flour, season with salt and pepper and add 5-6 tablespoons of water to bind the pastry together, making sure it’s not too wet (you can always add more four). Alternatively, you can buy ready made pastry.
Step 3
Leave the pastry to chill for 30 minutes before using.
Step 4
Roll out the pastry and line an ovenproof dish with it.
Step 5
Make sure there’s enough pastry for the top of the pie.
Step 6
Boil the potatoes in water until tender but not quite falling apart, meanwhile in a separate pan add the oil and fry the onions.
Step 7
Add the potatoes, and cook for 2-3 minutes.
Step 8
Add the flour and stir in well, then add the milk and cook for 2 minutes to thicken and make a little saucier.
Step 9
Add the cheese, mustard and a little salt and pepper to taste, before allowing to cool slightly.
Step 10
Put the potato mix on the pre-lined pie you have retrieved from the fridge, and then put on a pastry lid, brush round the rim with beaten egg before crimping the lid onto the base.
Step 11
Brush the whole pie with beaten egg and place in the oven, bake at 180oc for 25-30 minutes til golden brown.
Step 12
Serve with vegetables of your choice or eat cold with a salad.
