Step 1
Preheat the oven to 350°F. Spray a 9-inch pie pan with cooking spray.

In a medium bowl, whisk together the eggs, almond milk, salt, pepper, and thyme.

Fold in the spinach and cheese. Pour the mixture into the prepared pie pan.
Substitution Tip:

If you have IBS-C, omit the cheese. To make this GERD friendly, I'm at the black pepper. Use three whole legs and six egg whites in place of the six whole eggs and reduce the Swiss cheese to a 1/4c.
