Instructions
Step 1
Heat a glug of oil in a frying pan and add the nigella seeds. Cook until they start popping.
Step 2
Add the diced onion and fry gently. Add salt and pepper.
Step 3
Add the turmeric and allow to simmer for a few minutes.
Step 4
Add the lentils and stir well. Cover with boiling water and stir again. If the water evaporates too quickly, top up.
Step 5
Just before serving, stir in the lemon zest, juice, and squashed half lemons. Simmer for one more minute.
