For the BOLOGNESE SAUCE

250 grminced pork
350 grminced beef
400 grtomato passata
2 spoonstomato paste
extra virgin olive oil

Step 1
In a saucepan over medium low heat drizzle olive oil and add your chopped veggies (onion, celery, carrot). Sizzle for a couple of minutes.

Add your minced pork and beef. Cook for 5 mins or until brown, stirring occasionally.

Add your tomato passata and tomato purée and season with salt and pepper.

Cover with a lid, lower the heat to low and cook slowly for 1 hour, stirring occasionally.

In the meantime, peal and cut your potatoes into small pieces.

Boil your potatoes in some salted water about for 20-25 mins or until fork tender.

In a bowl, mash your boiled potatoes with a potato ricer then mix them with corn starch until you form a dough.

Take 50g of potato dough and use your hands to form a flat disk.

Add mozzarella cubes, 1 spoon of your Bolognese sauce and close it with your hands to form a ball.

Beat your eggs in a bowl and add your breadcrumbs in another bowl.

Coat your croquettes with eggs and breadcrumbs and set aside (you can repeat this process twice if you want some crunchier croquettes).

Fry in abundant sunflower oil for a couple of mins or until crispy. Buon appetito!
