Step 1
Cook the eggs scrambled style with your favorite gluten free seasoning and the milk.
Step 2
In a medium bowl, combine the tomatoes, jalapeno, cucumber, cilantro, a squeeze of lime, a splash of olive oil and season with salt and pepper. Set aside
Step 3
Heat a cast iron pan to low and heat the a tortillas, top with scrambled eggs and cheese. Cook until cheese has melted then flip to warm the other side. Cook the rest until done. Cut the quesadillas.Garnish with the tomato mixture. Serve with sour cream if you like. Deliciousness!
