Step 1
Start by peeling your carrots and dicing your onion, celery and peeled carrots into 0.5cm cubes

Add your diced soffritto ingredients into a preheated pan on a medium-high heat with olive oil and cook until softened, around five minutes

While you soften your vegetables, peel and finely dice your garlic

When your vegetables have softened, move them to one side and add the diced garlic and tomato paste and cook until fragrant, around 30 seconds, then mix to combine

Now add your mince to the pan, season with salt and pepper and brown off I like to mix the mince together to give it the texture of sausage meat which when browned creates chunks of mince that create a texture variety

Once your mince has browned mix to combine and add the herbs to the pan and mix to combine and cook for two minutes to bloom the herbs

Now add the red wine to deglaze the pan and allow the alcohol to cook off, around two minutes

With the alcohol cooked off, add the passata and mix to combine

Cover the pot and cook on medium low on a simmer for 2 - 4 hours, stirring every 15-30 minutes until the sauce has thickened
