Mixed Winter Greens and Beans

Ingredients
4 servings
3 poundsseasonal greens
such as chicory
fresh herbs
spinach
chard
romaine
escarole
arugula
fresh flat-leaf parsley
basil
chives
¼ cupextra-virgin olive oil
robust
1yellow onion
medium, finely chopped
3garlic cloves
finely chopped
1 cuptondini del Tavo beans
cooked, or other white
fine sea salt
½ cupcruschi
chopped
Instructions
Step 1
• Bring a large pot of salted water to a boil. Add the greens and herbs, in batches if necessary, and boil until bright green and tender, about 5 minutes. Drain the greens through a fi ne-mesh sieve and set aside to cool for a few minutes. When the greens are cool enough to handle, squeeze out any excess water and coarsely chop.
Step 2
• In a large skillet, combine the olive oil, garlic, and onion and sauté over medium heat until the onion is tender, 4 to 5 minutes. Stir in the greens and cooked beans and warm through. Season with salt and transfer to a serving platter.
Step 3
Sprinkle with cruschi and serve warm or at room temperature.
