Apple and Gruyere Potato Soup
Serve with 1/3 cup of 2% cottage cheese to increase protein.

Ingredients

6potatoes
peeled and sliced
4Granny Smith apples
large, peeled and quartered
1Granny Smith apple
large, thinly sliced for garnishing
1 cupyellow onion
chopped
2 cupslow-sodium chicken broth
¼ cupgreen onions
sliced
¼ teaspoondried thyme
4 ouncessmoked Gruyere cheese
cut into cubes
3 cupsfat-free evaporated milk
2 ⅔ cups2 % cottage cheese
Instructions
Step 1
Spray a soup pot with some cooking spray. Add green onions, onion and four of the apples. Sauté over medium heat until well softened.
Step 2
Add chicken broth and thyme; bring to a boil. Reduce the heat to low and simmer for around fifteen minutes. Remove from heat.
Step 3
As the broth mixture is cooking, combine the evaporated milk and potatoes in a separate pan. Cook over medium heat, stirring frequently, until the potatoes are tender.
Step 4
Pour the potato mixture into the soup pot and blend well.
Step 5
Puree the soup in batches in a blender and puree until smooth. Add the pieces of cheese as you puree.
Step 6
Return the pureed batch to the soup pot and heat until warm. Serve in individual bowls and garnish with thin slices of apple. Serve immediately.
