AVOCADO HUMMUS ON SWEET POTATO TOAST

Between the avocado hummus AND sweet potato toast, this recipe is a two-in-one of goodness. It makes for a brilliant snack or appetiser, and I will definitely be serving it next time I’m hosting friends for dinner. This recipe is so simple you’ll be surprised by all the flavours! A very nourishing dish, sure to impress your friends 😊

Avocado hummus
1avocado
large, ripe
½ cupchickpeas
cooked
½ cuplemon juice
¼ tspsalt
1 Tbsptahini
1 tspcumin
1garlic clove

Instructions
Step 1
Preheat the oven to 200°C.
Step 2
Cut the potatoes into 1cm thick slices. Place on baking paper, drizzle with olive oil and a pinch of salt.
Step 3
Bake for 30 minutes, turning halfway through.
Step 4
Add the avocado, chickpea, lemon juice, garlic, salt, cumin and garlic to a food processor and process until smooth.
Step 5
To a bowl, add the cherry tomatoes, red onions and olive oil and mix.
Step 6
Top the sweet potato toast with the avocado hummus, the tomato mix, parsley, and chilli flakes and enjoy
