Chicken Pot Pie 🥧

This super easy and quick chicken pot pie can be the salvation for your cravings.
This serve 1-2 person or 1 if you're hangry (i'm not judging, been there done that).
You can choose any type of chicken cuts but I recommend minced/thigh/breast meat.
Other vegetable I recommend would be peas, spinach, carrots, potatoh and any vegetable you want!
I also shave some Truffle Manchego on top and inside the pie, this is optional and you can replace it with other cheese that you prefer (i won't recommend mozzarella though, too melty).

Step 1
preheat your oven.
Step 2
heat your pan/pot on a medium heat and pour some olive oil.

sautee the chixken in the pot first and put the corn and mushroom in the same bowl and season with all the seasoning mentioned.

Cook until the chicken is half-cooked as well as the mushroom. After that, pour everything in a bowl to cool down.

now prepare the "sauce" for the filling. Use the previous pot and put it in low heat.

add butter until fully melted and slightly bubbling, then add the flour and whisk.

slowly add the milk as you stir to avoid clumps. Stir until it thickened slightly and add all the seasoning and chicke boullion.

After thicken turn off heat and prepare the pie crust.

In this step you can either choose all around puff pastry or just the topping.

cut the 4x4 sized puff pastry into two parts, laid one of them into the baking tray (i used one like in the recipe picture i don't know the name).

now in order, pour the filling-sauce-filling and lastly sauce. and then top it with some shave manchego before closing it with the other puff pastry skin.

After closing it with the other skin, brush some egg wash on it and shave more of the Manchego on top of it.

Now, shove them in the 180 Celcius preheated oven for 30 minutes or until the skin is golden.
