Step 1
Cook rice according to directions.
Step 2
Steam peppers for 5 minutes.
Step 3
Heat 1 T olive oil in a large skillet. Stir in onion and garlic. Sauté about 1 minute.

Add ground beef, seasoning, salt and pepper. Cook until beef is completely brown. Add tomato paste and cook for an additional 3 minutes.
Step 5
Remove from heat. Stir in the rice, spinach, and feta cheese.
Step 6
Preheat oven to 400 degrees.
Step 7
Fill each pepper with 1/2 of beef mixture. Bake for 20-30 minutes.
Step 8
Top with additional feta cheese to garnish.
