Instructions
Step 1
With a sharp knife or kitchen scissors cut the bacon into pieces.
Step 2
In a Dutch oven or large stock pot cook the sausage and bacon over medium heat until browned and a little crispy, 10-15 minutes. If there’s too much grease afterwards, spoon some out, but leave a couple tablespoons for flavor.
Step 3
Add the onion and cook until tender, 3-5 minutes. Add the garlic and seasonings and cook 30 more seconds. Add the chicken stock and bring to a boil.
Step 4
Lower the heat to medium/low and Add the gnocchi. Cook 10 minutes.
Step 5
Meanwhile remove the stems from the kale and roughly chop. Add the kale and the heavy cream to the pot and cook until the kale is wilted, about 5 minutes. Add more salt and pepper to taste.
