Instructions
Step 1
Set oven to 325, rack in middle. Grease two 9 inch cake pans and line with parchment.
Step 2
Whisk flour, baking powder, and salt together in a medium bowl. Heat milk and butter in a small saucepan over low heat until butter is melted. Remove from heat, add vanilla, and cover to keep warm.
Step 3
In stand mixer, whisk eggs and sugar on high speed until light and airy, about 5 min. Add milk mixture and mix by hand. Add dry ingredients and whisk by hand until just incorporated.
Step 4
Working quickly, divide batter evenly between the two pans. Bake until tops are light brown and tester comes out clean, 20-22 min.
Step 5
Cool completely in pan on wire racks, about 2 hrs. Remove from pans and cool to room temp before wrapping in plastic wrap and chilling in fridge before decorating.
