Instructions
Step 1
Dice Aubergine into 1cm cubes (no need to peel)
Step 2
Sweat in olive oil for 10 to 15 mins
Step 3
Add chopped onion & garlic and cook until soft
Step 4
Add 2 tins chopped tomatoes, basil stalks (chopped) and balsamic vinegar
Step 5
Season and cook for 15 mins ( you need quite a bit of salt)
Step 6
Cook pasta
Step 7
Mix together and garnish with basil leaves
Step 8
