Step 1
Heat up some oil in the pan and brown off the meat. Add 75% of the taco seasoning and allow it to cook through. Remove from the pan and set aside
Step 2
Add the onions and peppers to the pan and reduce the heat. Add the rest of the taco seasoning and soften the vegetables. As this is softening, get your rice cooked
Step 3
You can add the rice to the beef and stir through if you like or assemble separately in the bowls. Add the rice, beef, corn, beans, salsa and low fat cheese. Top with coriander and the lime wedge. Enjoy!
