Mediterranean Stuffed Carrots and Potato’s

Traditionally this Palestinian dish is made with thick purple carrots but those are not easily accessible in the US and are not grown everywhere. They are stuffed with spiced rice and meat and cooked until tender. They can also be made vegan with no meat and only rice and vegetables. Enjoy 😊

Instructions
Step 1
Before starting remember that every step is crucial and do not skip.
Step 2
Rinse rice and let sit in hot (not boiling) water for 10-15 minutes
Step 3
Peel and core carrots and potatoes and rinse very well ( when coring carrots be mindful they brake easily) do not discard the insides of the carrots and potatoes they will be used in the stew!
Step 4
Wrap carrots and potatoes in paper towel inside and out to remove all moisture after rinsing (very important)
Step 5
Once dry fry the carrots and potatoes in vegetable oil until slightly browned
Step 6
Lets work on the stuffing!

Drain rice from water and add 1 tspn unsalted butter
Step 8
Mix and add meat
Step 9
Put on gloves and mix by hand
Step 10
Season rice with Salt, pepper, and generous amount of seven spice
Step 11
Stuff the carrots and potatoes with the Stuffing
Step 12
Add the cored pieces of carrots and potatoes to pot and cover with water and a little spices
Step 13
Cook until rice expands and meat is cooked
Step 14
At the end sauté garlic with olive oil and add to pot
Step 15
Juice lemon and add to pot with a little salt
Step 16
Slice the other lemon and serve with meal
