Instructions
Step 1
Prepare and mix ground pork, thinly sliced cabbage, woodear mushroom, sliced carrot, evenly cut and pre-soaked glass noodles, diced garlic and chopped scallion. Further season the mixture with salt, sugar, light soy sauce, oyster sauce, sesame oil and eggs. Mix well until fully combined.
Step 2
Mix all purpose flour with water evenly to create a glue texture, set aside; Make dipping sauce with mixing together chili paste, minced garlic, fish sauce, dark vinegar and water.
Step 3
Remove egg skin from the package and lay flat on a chopping board or counter. Add in a small amount of egg roll stuffing towards one side of the wrapper, arrange the stuffing into a rectangular shape, pick that side up and start rolling the egg roll towards the other side. Fold both left and right sides towards the center as you are rolling, dap some “flour glue” at the other end, continue to roll until egg roll is fully sealed and closed. Repeat this motion with the rest of egg rolls.
Step 4
Heat up cooking oil in a sauce pan, when the tempura is right ( use a chopstick to see if it starts to bubble),throw in egg rolls to deep fry for 5-7 minutes(flip during this process) until golden brown. Remove the egg rolls from oil and drain.
Step 5
Serve alone or serve with a dipping sauce.
