Crispy Rice with Spicy Salmon Bites
Crispy rice with spicy salmon is the perfect appetizer. I love the crispy rice, it’s got that crunchy outer layer and chewy center. It has a nice aroma from the fried rice and it’s so crispy! I prefer to pan fry the rice over medium heat with a little oil. The secret to not having the rice fall apart to make sure you press the rice firmly into your dish and let this cool for a few hours.

sashimi grade
3 TbspJapanese kewpie mayonnaise
2 Tbspsriracha
1 Tbspmirin
1 Tbspponzu sauce
1 tspsesame oil
2 stalksgreen onions
chopped, green part
Crispy Rice
Instructions
Step 1
Cut salmon into small cubes. Add kewpie mayo, sriracha, ponzu sauce, mirin and sesame oil along with green onions.
Step 2
Cook rice and add rice wine vinegar, sesame oil, sugar and salt. Press cling wrap into a baking dish and press the rice firmly into the dish and refrigerate for a couple hours to let it stiffen up. Cut into cubes then pan fry for a couple minutes on each side until crispy.
Step 3
Top the crispy rice with the salmon and top with jalapeno and sriracha.
