Sausage & Bean Casserole w Crusty Bread

Before becoming vegan, this was my go-to dinner when I was on the keto diet. Substitute the bread for cauliflower rice and voilà - you have yourself a delicious low-carb and high-fat meal! Not to mention the fibre benefits from the butter beans.
Pair this dish with rice, homemade chips or, my personal favourite, fresh sourdough from the bakery. You just can’t go wrong with these ingredients that are packed full of flavour.
The white wine is optional, however, it add’s an absolutely divine taste overall to the dish. Plus, since you’ve opened a bottle, you might as well have a glass on the side with your meal. You’ve deffo earned it after all that cooking!

Ingredients

Sausage & Bean Casserole
3 Tbspolive oil
8meat-free sausages
1onion
large
1red pepper
1yellow pepper
2celery stalks
3garlic cloves
fat
1 ½ tspsweet smoked paprika
½ tspcumin powder
dried thyme
125mlwhite wine
400gtinned tomatoes
1tin butter beans
drained
fresh thyme sprigs

Instructions
Step 1
Heat 2tbsp oil on a medium heat in a dish and fry sausages accordingly. Once cooked, remove and set aside for later. Cut up into pieces once cooled.
Step 2
Add remainder of oil and fry chopped onion until golden. Add chopped peppers and finely chopped celery, cook until soft.
Step 3
Stir then add minced garlic, sweet smoked paprika, cumin powder and dried thyme. Allow aromas to release then pour in wine. Use a wooden spoon to remove any residue stuck to the pan.
Step 4
Fry until alcohol burns off then add tinned tomatoes, chopped sausages and fresh thyme. Lower heat, cover and cook for 20 mins.
Step 5
Drain butter beans and add to dish, cover and cook for a further 20 mins. Once done, garnish with black pepper and chopped chives. Serve with crusty bread and enjoy!
