Instructions

Roasted Garlic Butter

Step 1
Remove the outer paper from your garlic blossom and cut off the top 1/4th to expose the insides.
Step 2
Drizzle with the olive oil, cover in aluminum foil and roast for 40 minutes at 400 degrees.
Step 3
Once the blossom has cooled enough to handle, squeeze the cloves into a small bowl.
Step 4
Add butter and all seasonings to the bowl and mix well.

Meatballs

Step 5
In a blender or food processor, blend beans into a paste.
Step 6
Mix together the beans and all other ingredients in a large bowl, mix well. The mix should hold together well and not be runny. If it is, add more bread crumbs.
Step 7
With your hands, form small balls and place on a lined cookie sheet. Ideally golf ball size but they can be whatever size you want. Adjust your cooking time if needed.
Step 8
Bake for 25-30 minutes.

Tomato Mix

Step 9
Place all ingredients into a medium sauce pan over medium high heat.
Step 10
Mix often and bring just to a boil. Remove from heat and set aside.

Assembly

Step 11
Coat your bread slices on both sides with the garlic butter.
Step 12
Toast in a large sauté pan over medium high heat.
Step 13
Scoop on your tomato mix, top with 3 meatballs. Sprinkle on Parmesan cheese to garnish.
