Apricot lentil pots

A simple dish of sweet and savoury flavours topped with crispy breadcrumbs. Eat alone for a simple lunch or supper. A great teatime treat after school too.

Instructions
Step 1
Heat 1 tablespoon of the oil in a pan and add the ginger, cook for 1 minute then add in the lentils and dried apricots.
Step 2
Add half of the water to the pan and stir. Put a lid on the pan and leave to simmer on a low heat for 5 minutes.
Step 3
Add the rest of the water to the pan , stir and replace the lid then leave to simmer for a further 15 minutes.
Step 4
Check the mixture does not stick to the bottom of the pan and add a little more water if it becomes very dry.
Step 5
When the lentils are tender, transfer it to a serving dish.
Step 6
Using a clean small pan, heat the rest of the oil and gently fry the breadcrumbs in the oil until they are coated. Tip the breadcrumbs on top of the lentil mixture to make a tasty crust topping.
