Step 1
Slice pork tenderloin into 3mm thick slices

Then stack the pork slices, and cut long thin slices ("shreds")

Clean the pork by submerging in water for a few minutes. When done, remove the pork and squeeze the water out

Slice the green peppers

Mince ginger and garlic

Chop green onion

Gather all marinades into bowls/plates first.

Marinate pork with salt, white pepper, light soy sauce, and dark soy sauce. Mix until pork absorbs all seasoning.

After the pork is dry, add egg white (ensures that sauce sticks when cooked).

Add potato starch

Add some oil to prevent pork from sticking

Heat the wok, and add some scallion oil

Add pork when oil is 250F. Cook until it changes color, and then take it back out and set aside

Cook the garlic and ginger on medium-low heat until fragrant

Turn up to medium-high, and cook the green peppers

Add the pork back in, stir fry for a bit, and then do final seasoning - salt, MSG, sugar, soy sauce, and scallion oil.
