What is a chimichanga anyway, you might ask? Well, it’s basically the happiest accident in culinary history. It’s said that long ago, some lady accidentally dropped a burrito into the deep fryer and decided to serve it to her customers anyway. The results were unexpectedly delicious, and a new legend was born! Don’t know if that’s even remotely true, but I’ve always had a bit of a soft spot for mistakes that happen to become world famous. Chimis can be filled with just about anything, like this classic chicken, cheese, and bean combo. It may not be all that creative as chimis go, but I’ll guarantee it’ll please any merc, no matter the size of their mouth!

Instructions

Step 1
Preheat oven to 250° and begin heating oil to 365°

In a large sauté pan, or microwave safe bowl, combined the chicken, green chilies, beans, chili powder, lime juice, salt and pepper, and warm-through

Assemble each chimichanga. Start with a layer of chicken mixture on each tortilla and then add a layer of shredded cheese. Roll Chimi, and secure seam with toothpicks.

Step 4
Fry one at a time in the oil, turning with tongs, until all sides are golden brown. Drain on wire rack or paper towel before transferring to baking sheet.
Step 5
Keep warm until serving. Serve with salsa, or cheese sauce.
