500gchicken thigh

Instructions
Step 1
Mix flour, salt and water into a bowl and stir with a scraper, then knead it with your hands until you don't see any dry flour.
Cover the bowl, and let the dough rest for 20 minutes.
Step 2
Knead the dough again, cover the bowl and let it rest for one hour.
Step 3
Prepare the filling: wash the cilantro leaves and let them dry, chop the chicken in pieces, add them in a large bowl with soy sauce, ginger paste, egg white, white pepper, five-spice powder, and salt.
Step 4
Chop the green onions and put them in a bowl, heat vegetable oil into a pan and heat it up, once you see a little bit of smoke, pour it on the chopped onions and stir well.
Step 5
Chop the dry cilantro and add it to the chicken, add sesame oil and stir the filling.
The dough and the filling should be ready by now.
Step 6
Make the dumplings (I suggest you watch the linked video for the techniques), make a small thin disk with the dough and fill it as much as you like (not too much or the wrapping won't be easy).
Step 7
Wrap the dumplings with your preferred technique (again, watch the video for the specs), and put them on a tray sprinkled with flour.
Step 8
Take a pan, put it on the stove and pour the oil, start to fry the dumplings before the oil gets too hot, when the crispy side is golden, add the water (be careful, it can be a very hurtful part if not done correctly) then close the lid and let them steam for about 5 minutes.
Step 9
After all the water evaporated, cook the dumplings until crisp and brown.
Serve them hot with the toppings and sauces you like.
