Date and Dill Rice
This is, without a doubt, one of my favorite hot grain dishes to serve with meals. The rice gets steamed with butter so it’s perfectly glossy and fl uffy, then fi nished so simply with dates and dill, whose green fl ecks are beautiful against the white rice. It’s a fresh, aromatic accompaniment that makes almost any dish better

Instructions
Step 1
1 In a sieve, rinse the rice under cool running water until the water runs clear.
Step 2
2 In a medium pot, heat the olive oil and butter over medium heat. Add the onion and cook until translucent, about 5 minutes.
Step 3
Add the garlic and salt and sauté for 1 more minute. Stir in the rice and stock, increase the heat to medium-high, and bring to a boil.
Step 4
Reduce the heat to low, cover, and cook until all the water has evaporated, about 12 minutes. Fluff with a fork, then fold in the dill, dates, and a squeeze of lemon juice. Serve hot
