Instructions
Step 1
Peel and cut sweet potato into equal, bite sized chunks.
Step 2
Cut mushrooms into bite sized chunks.
Step 3
Finely chop carrot, cilantro, garlic, ginger, and onion.
Step 4
Heat oil over med-low heat in a large pot and add carrot, ginger, garlic, onion, chili, chili powder, and garam masala and fry until aromatic.
Step 5
Add sweet potato and cook for 15 mins. Then add chickpeas and cook for 10 mins, then add mushrooms and cook for another 5 mins.
Step 6
Add canned tomatoes and mix, then add enough water to make a thick soup consistency. Simmer for 25 mins, stirring occasionally to prevent burning.
Step 7
Add salt and pepper to taste (approx 1tsp salt) and then lemon juice. Simmer for 5 more minutes.
Step 8
Pull off heat and add cilantro.
