Date and nut granola bars
Tried out these delicious no-bake date & nut granola bars 😋
Date & nut granola bars
Recipe credit: Adapted from
1 & 1/2 cups crunchy granola
1 heaped cup pitted dates (Preferably moist sticky dates to hold the bars together)
1 Tbsp coconut flakes
2-3 Tbsp desiccated coconut
2 tsp sesame seeds
1/2 cup roughly chopped almonds
1/2 cup roughly chopped pecans
1/4 cup honey/maple syrup
1/4 cup peanut/nut butter
- Process the dates in a food processor until it forms a dough like consistency
- Place the granola, dates, nuts, sesame seeds & coconut in a mixing bowl (you could add dried cranberries or choc chips as well)
- Heat the honey/maple syrup & nut butter on low heat on the stove and mix well
- Pour this over the granola mixture and mix well while breaking up the dates
- Transfer to an 8x8 pan lined with parchment paper and press down firmly
- Press a few whole almonds over the top & sprinkle sesame seeds over (or better yet, drizzle with some dark chocolate)
- Freeze for about 15-20 minutes
- Remove from the pan and slice into bars
- Store in an airtight container in the refrigerator
