Step 1
1. Preheat the oven to 375 degrees. Wash and peel your root vegetables then slice thinly (I like using a mandolin for consistency)
Step 2
2. In a skillet, add some olive oil to the bottom and then start adding your root vegetable slices in a spiral until you fill the entire thing up
Step 3
3. Brown your butter on low-medium heat and pour over your vegetables
Step 4
4. Add chopped sage, grated white cheddar (or whatever cheese you like), salt and pepper to taste and cover with foil
Step 5
5. Bake for 30 minutes and then remove the foil. Back in the oven until crispy (usually about another 20 min).
Step 6
*Tip: if you’re making this for the holidays, you can do it in advance! Bake for 30 min with foil and set to the side for later. About 20-25 min before serving, add back into the oven without the foil.
