Kookoo Sibzamini Potato Kookoo

You can enjoy Kookoo Sibzamini as they are with a simple dollop of yogurt, or bring out the whole cavalry of sides and dips as accompaniment. I love having a batch in the fridge to snack on, especially around that precarious 4 p.m. hour. You can also make smaller patties and serve them hot off the pan as a mazeh—a little bite for an appetizer spread—with a tall, frosted glass of beer. Serve with a side of spicy yogurt, or Maast-o Khiar, or alongside Arugula Orange Fennel Salad. Use any type, and as much hot sauceor paste you like. We’re partial to Calabrian hot pepper sauce or the North African chili paste harissa.

Instructions

Step 1
Place the potatoes in a large pot. Cover with water (about 6 cups) and add 1 teaspoon salt. Partially cover and bring to a boil. Cook on medium-high until the potatoes are fork-tender, about 20 minutes. Drain and return the potatoes to the hot pot for a couple of minutes to steam dry. Transfer the potatoes to a large bowl. When the potatoes are cool enough to handle, grate them on the large holes of a box grater. Set aside to cool.
Step 2
Meanwhile, prepare the spicy yogurt, if desired. Place the yogurt in a small bowl. Season with salt and stir in hot sauce of choice. Sprinkle on the chopped parsley and set aside.
Step 3
In a small bowl, lightly whisk the eggs. Set aside. Add the turmeric, baking powder, pepper, saffron, and 2½ teaspoons salt to the potatoes.
Step 4
Mix and add the eggs and fold to combine well. The mixture should have the consistency of thick yogurt or soft-serveice cream.
Step 5
In a large pan, heat ¼ cup olive oil over medium-high heat. The oil should be nice and hot but not smoking. Stick the end of a wooden spoon handle in the oil. If small bubbles form around it, the oil is hot enough and ready. Reduce the heat to medium and drop in¼ cup of the batter with a spatula. If you’d like more uniform patties you can use a round 3-inch mold. Fry until golden, 3 to 5 minutes per side. Work in batches, and add more oil as needed. Place the patties on a paper towel to drain and serve with a side of spicy yogurt, if you like.
Step 6
MAKE AHEAD: Store in the fridge for up to 3 days. Serve at room temperature or gently heat through in the oven.
Step 7
PLAN AHEAD: Freeze with parchment paper in between each patty and wrapped tightly in foil or place in an airtight container. Heat through in the oven.
