Sweet Potato Swirls

Can be frozen cooked or uncooked. If you are struggling to slice into slices, partially freeze for 10 - 15 minutes and then slice. Only do this though, if you are going to freeze them uncooked.

Instructions

Step 1
Preheat oven to 180C.
Step 2
Melt butter in a saucepan and fry the onion, bacon and ginger until the onion is soft.
Step 3
Take off the heat and add into the sweet potato, herbs, sour cream and cheese, and mix well.
Step 4
Cut pastry sheets in half lengthways, need to keep the length of the pastry, not the width.
Step 5
Spoon the sweet potato mixture lengthways, down the middle, leaving about an inch either side.
Step 6
Fold in the sides over the sweet potato to meet in the middle. Then fold the pastry in half to create almost a heart shape.
Step 7
Then slice into around 2cm slices and cook for 15 minutes, until golden brown.
