I found Harrisa Seasoning at The World Market and fell in love with it. This chicken can have a small kick or a lot of kick depending on how you like it!

Step 1
Cube 1 lb of chicken breast and cook in a couple tps of olive oil in a large skillet
Step 2
While chicken is cooking half your cherry tomatoes and cut off just the tips of the asparagus. Use as much of each as you like. I use a full bunch of asparagus and about 10 cherry tomatoes
Step 3
Once chicken is cooked-remove from skillet. Add about a half cup of chicken broth and between 6-8 oz of coconut milk. Add between 2-3 tbs of Harrisa and 1-3 tps pf cayenne (depending on how spicy you like your food). Lower heat and let simmer
Step 4
Add asparagus tips and tomatoes to sauce and let cook for 2 minutes. Tomatoes should be soft and asparagus should have a bite still.
Step 5
Add your chicken back into the sauce with veggies and top with fresh cilantro. I like to serve mine over rice
