Instructions

Preheat oven to 180C

Peel the apples cut them in half and using a spoon discard the seeds. Then roughly slice and cut in half again.

Transfer the apples into a frying pan, and add cinnamon, brown sugar and vanilla paste. Bring them to a boil, stirring occasionally, once boil and sugar is dissolved cook for another 4-5 minutes. Set aside.

Meanwhile, prepare the pastry. In a blender combine sugar, ice-cold butter, flour and a pinch of salt. Blend until the mass turns into crumbs. Set aside.

On a dry frying pan toss the walnuts for a few minutes then roughly chop.

To assemble, divide the apples equally between 4 ramekins, top with walnuts and cover with crumbs.

Bake for 25-30 minutes, or until golden.

Serve warm or cold. Perfect with the scoop of vanilla ice cream.
