Instructions

Step 1
Prepare ingredients, Boil kettle for gnocchi
Step 2
Place a sauté pan on a medium/high heat and add 1/2 the olive oil to a sauté pan and throw in the yellow pepper, mushrooms and spring onions. Mix together for 2 mins and then add the garlic and herbs. Mix and let sauté.
Step 3
Meanwhile cook the gnocchi as to the packet instructions in a separate saucepan.
Step 4
Coming back to the vegetables, throw in 1/2 the jar of tomato paste and mix into the vegetables with the rest of the olive oil. Let this fry for 30 seconds - 1 minute..
Step 5
Take the cooked gnocchi off the boil and drain. Add to the vegetables along with the coconut milk and give a good stir.
Step 6
Next spoon in the rest of the tomato sauce and mix to combine all ingredients. Turn down to a medium heat and stir occasionally until sauce has reduced and thickened.
Step 7
Add salt and pepper to taste then serve and garnish with chopped spring onions.
