Beef and Poblano Tacos

Instructions

Step 1
Wash and dry all produce. Finely dice tomato. Peel and finely dice Kiwi. Halve, peel, and thinly slice onions; mince a few slices until you have 2 tbsp. Roughly chop cilantro. Quarter lime. Core, deseed, and finely chop poblano.
Step 2
In a medium bowl combine tomato, Kiwi, minced onion, half the Cilantro, and a squeeze of lime juice. Season with salt and pepper.
Step 3
In a small bowl combine sour cream and a squeeze of lime juice. Stir in water 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt and pepper.
Step 4
Heat a drizzle of oil in a large pan over medium high heat. Add poblano, Sliced onion, and half the Mexican spice. Cook, stirring occasionally, until softened and lightly charred.
Step 5
Add beef, another drizzle of oil, and remaining Mexican spice to pan with veggies. Cook, breaking up meat into pieces, until beef is browned and cooked through. Season with salt and pepper.
Step 6
Reduce heat under pan with beef mixture to medium low. Stir in stock concentrate, 1/4 cup water, and tomato paste. Cook, stirring, until everything is coated in thick sauce. Season with salt and pepper.
Step 7
Wrap tortillas in a damp paper towel or Tortilla warmer and microwave 30 seconds. Divide tortillas between plates and fill with beef filling. Top with salsa, crema, and remaining cilantro. Serve remaining lime wedges on the side.
