Sweet and Spicy Sticky Salmon. I used to have a really hard time eating salmon, until I finally perfected my cooking method with it. For years, every time I made salmon, it would be bland, overcooked, or dry. I just couldn’t win! Ever since I started using an instant read thermometer, my salmon has been turning out flaky, tender, and so flavorful! I always prefer some type of sauce on top of my salmon and this sweet and spicy sticky sauce is one of my favorites!

Instructions
Step 1
Mix the soy sauce, chili garlic sauce, ginger paste, rice vinegar, and honey together.
Step 2
In a pot, bring to a quick boil and then simmer for about ten minutes. The sauce will start to reduce and thicken. I added a slurry or flour mixed with water to thicken a little more(optional)
Step 3
Pat the salmon dry and place on a parchment lined baking sheet. Brush the sauce on top and bake at 400 degrees for about 15 minutes( this will vary based on size of your salmon and if you are using single filets of salmon or not). My best method to tell when salmon is done, is use an instant read thermometer. I take mine out at about 130 degrees and let it rest for five minutes. I have found this method to be the best! The salmon is tender and flaky! I absolutely cannot stand dry and over cooked salmon so I ALWAYS use a thermometer!
Step 4
I top my salmon with a little more sticky sauce at the end and add sesame seeds and chives for topping :)
